The Shape Is the Meaning
The yuánbǎo (元寶) is a boat-shaped gold or silver ingot used as currency in imperial China. Its form — tapered at both ends, rounded in the middle, gleaming — became the definitive symbol of wealth and good fortune in Chinese visual culture. When you look at a spring roll, you are looking at a yuánbǎo. The cylindrical golden form, the sealed ends, the colour achieved at high heat: the resemblance is not accidental. It was designed into the dish.
In Mandarin, spring rolls are called chūnjuǎn (春卷) — literally "spring roll." They are eaten at the start of Lunar New Year, which marks the arrival of spring, as a direct expression of the wish for a prosperous year. Serving spring rolls at the table is an invitation: may wealth enter this home. The more rolls on the plate, the louder the invitation.
Why Lunar New Year. Why Spring.
The Lunar New Year cycle begins with the first new moon of the year — typically falling between late January and mid-February. It marks the transition from winter to spring, from the old year's energy to the new year's potential. Food eaten at this time is not merely sustenance. Each dish carries a specific wish: fish for abundance (the word for fish, yú, sounds like "surplus"), dumplings for wealth (shaped like ancient coins), long noodles for longevity, and spring rolls for prosperity.
The tradition of eating spring rolls at New Year is recorded in Chinese texts as far back as the Tang Dynasty (618–907 AD). The dish has evolved in its filling — pork, vegetables, glass noodles, mushrooms — but its shape and its meaning have remained constant across more than a thousand years.

In 2019, Mister Wok released a short promotional film pairing a plated order of spring rolls with miniature gold bars on the table. The visual is deliberate: same shape, same colour, same promise. The film cycles through the three values the dish has always carried — health, wealth, prosperity — without needing to explain them. The spring roll explains itself.
